Old Ebbitt Grill Express Meatloaf

Here's Susan's recipe for meatloaf.  As she would say, make it your own.  Enjoy, eec

 

24 hours before cooking, combine all ingredients. One secret of the great flavor is the preparation the day before, so all flavors can meld in the refrigerator.

 

1. Sauté and cool: 2 red peppers, cut into small dice

1 white onion, small dice

2. Grate: 2 carrots (box grater or microplane)

 

3. Crack 8 eggs, and lightly mix

 

4. After sautéed mix is cool, mix with 5 pounds ground beef (85%/15%)

 

5. Add Peppers, Onions, Carrots, mix thoroughly.

 

6. Make well in center and add: ½ cup honey; 1½ cups oatmeal; ½ cup milk and ½ cup soy sauce. Mix

 

7. Add eggs and salt/pepper, (I added two teaspoons of my favorite barbeque rub, made the meatloaf taste wonderful.)

 

Cover with plastic wrap and refrigerate 24 hours. Form 2 loaves;

Bake 11/2 to 2 hours 325 degrees.

 

We serve it with mushroom gravy, but this meatloaf has also proved popular with a tomato sauce (tomatoes, onions, garlic, fresh oregano and rosemary). Hope y'all enjoy making this meatloaf for your loved ones....Susan
