Wash and remove the cores of 25 pounds of tomatoes. (a sauce tomato like a roma is best.)
Cut up 2 ½ to 3 pounds of onions
Chop 2 cloves of garlic
Core and cut up 2 sweet green peppers
Core and cut up 4 hot peppers
Combine all of the above ingredients in a large pot and boil until the onions and peppers soften. Refrigerate this mixture overnight and then liquefy in a blender. Then strain to get out seeds and any skin.
Put the mixture back in the pot.
Add the following ingredients.
One tablespoon dry or two tablespoons fresh basil.
1 tablespoon dry oregano
¼ cup of salt
½ cup sugar
2 cups olive oil
4 - 12 ounce cans of tomato paste
1 – 6 ounce can of tomato paste
Boil for 1 ½ to 2 hours. Can in sterilized jars or freeze in freezer bags. Makes 10 to 12 quarts. (Recipe can be halved or quartered.)
